Ingredients to make Curried Cauliflower recipe :
- 2 cups cauliflower florets1/2 teaspoon curry powder
- 1/2 teaspoon fresh ginger, grated
- salt (to taste)
- 2 cloves garlic, chopped
- 1/2 cup onion, chopped
- 1/2 fresh tomato, peeled & chopped
- 2 teaspoons lite olive oil
- Steam the cauliflower for about 5 minutes, reserve 1/2 cup of the water.
- Put the oil in a saucepan; add the garlic and onion, and saute until soft.
- Stir in the curry, ginger and salt.
- Add the tomatoes and bring to a simmer.
- Add the cauliflower and the reserved 1/2 cup of water.
- Cover and simmer for about 3 minutes (or longer if you want the vegetables well done).
- Remove the cover to allow some of the liquid to evaporate. Serve hot.
