Ingredients to make Creamy Coleslaw recipe :
- 1 medium red bell pepper, thinly sliced
- 2 cups shredded carrots
- 1/2 cup green onions, thinly sliced
- 2 cups shredded cabbage
- 1 cup jicama, cut into thin strips
- 1/2 cup light mayonnaise
- 2 teaspoons hot sauce
- 1/4 cup apple cider vinegar
- 1/2 cup chopped fresh cilantro leaves
- 1 1/2 teaspoons salt
- 1/2 teaspoon crushed black pepper
- 2 tablespoons poppy seeds
- 1/2 teaspoon celery salt
- In a small bowl, combine the mayonnaise, vinegar, celery salt, poppy seeds and hot sauce, whisking until well blended.
- In a medium bowl, toss together the cabbage, shredded carrots, bell pepper, green onions, jicama and cilantro.
- Pour dressing over the salad, and toss until coated well.
- Season with salt and pepper to taste.
- Cover and refrigerate for about an hour so the slaw is thoroughly chilled and the flavors are blended.
