Ginger Carrot Soup, Low calories and Healthy Diet Recipe for Family

This Ginger Carrot Soup is truly delicious soup recipe. This recipe is very healthy and low calories. You can serve this recipe to your whole family, I'm sure they will like it.

Ingredients to make Ginger Carrot Soup recipe :
  • 1 tablespoon olive oil
  • 1 1/2 cups orange juice
  • 1/2 cup fat-free half-and-half
  • Chives for garnish
  • 2 large yellow onions, chopped
  • 1 pound carrots, cut in chunks
  • 2 cups low-fat chicken broth
  • 2 tablespoons crystallized ginger, minced
  • 1 teaspoon cinnamon
Preparation and Method to make Ginger Carrot Soup recipe :
  1. In a large pot, saute onions in olive oil until soft.
  2. Add carrots, broth, ginger and cinnamon.
  3. Simmer until carrots are thoroughly cooked, 30-40 minutes.
  4. Transfer to a blender or food processor and process until smooth.
  5. Stir in juice and half-and-half.
  6. Serve warm or chilled, garnished with snippets of chives.
